Instructions to make Tandoori Dhokla:
  1. In a mixing bowl mix water, sugar, salt, turmeric, white pepper, citric acid and oil mix well. Add besan and mix well for five minutes till light and fluffy.
  2. Heat water in a steamer, when water boils add eno,(mixed with one tablespoon of water) and add to the batter. Mix thoroughly, Grease a mould with oil. Pour the batter, tap and steam for 20 minutes. Take out, cool completely. Unmould and cut into squares.
  3. Mix curd, ketchup, red chilli paste, black salt, chaat masala, tandoori masala, mint and coriander and mix well.
  4. Heat two tablespoons oil, when hot add mustard seeds, when they splutter, add ginger garlic paste. Add this to the marinade.
  5. Dip each dhokla in the marinade completely. Shallow fry, taking care not to break the dhoklas. Serve hot.
