  1. Wash and cut the Brinjal and put it into a water bowl.
  2. In a kadai, add oil. Once oil gets heat, add mustard seeds, fenugreek and asafoetida. Fry it.
  3. Add shallots and curry leaves. Saute till shallots becomes translucent.
  4. Add tomatoes and brinjal, saute in medium flame for 5 mins.
  5. Add tamarind extract, garlic, turmeric powder, sambar powder and salt. Let it boil.
  6. Meanwhile add grated coconut and cumin seeds in a mixie. Grind to a smooth paste by adding water gradually.
  7. Add the ground paste in the curry. Then add required water. Cover and cook for 15 mins in medium flame.
  8. Garnish with coriander leaves. Mix well. Transfer to a bowl.
  9. Now it's ready to serve. Serve with hot rice, idli and dosa.
